Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup unsalted butter softened
  • ½ cup sugar
  • 1 egg
  • ½ cup honey
  • ¾ cup heavy cream
  • Pistachio chopped

Method
 

  1. Cream butter and sugar until fluffy, then mix in egg and dry ingredients to form dough.
  2. Bake small cookies until lightly golden and cool completely.
  3. Simmer honey, water, and lemon juice to make syrup; cool slightly.
  4. Whip cream with sugar and vanilla until soft peaks form.
  5. Brush cookies lightly with honey syrup.
  6. Fill with cream and sandwich together gently.
