Ingredients
  

  • 3 ripe bananas
  • 3 tbsp unsalted butter
  • 1/2 cup brown sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • 2 tbsp dark rum
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 3 tbsp cornstarch
  • 3 egg yolks
  • 11 oz vanilla wafers
  • 1 cup whipped cream

Method
 

  1. Melt butter and caramelize bananas with sugar and spices.
  2. Add rum and vanilla; remove from heat.
  3. Prepare custard by heating milk and whisking with sugar, cornstarch, and yolks.
  4. Cook until thickened.
  5. Layer wafers, custard, and bananas.
  6. Chill 4 hours.
  7. Top with whipped cream before serving.

Notes

  • Chill fully for best texture.
  • Do not overcook custard.
  • Garnish just before serving for freshness.
