Ingredients
  

  • 2 tbsp olive oil
  • 1 small onion
  • 3 cloves garlic
  • 2 cans black beans
  • 2 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp pepper
  • Juice ½ lime

Method
 

  1. Sauté onion in olive oil until soft.
  2. Add garlic and cook briefly.
  3. Stir in beans and spices.
  4. Add broth and simmer 10–12 minutes.
  5. Blend partially until creamy.
  6. Finish with lime and serve.

Notes

  • Store up to 5 days refrigerated.
  • Freeze up to 3 months.
  • Add jalapeño for spice.
