Ingredients
  

  • 1 lb ground beef lean
  • 1 tbsp olive oil optional, if beef is very lean
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups green cabbage chopped
  • 1 can diced tomatoes 14.5 oz
  • 4 cups beef broth
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt adjust to taste
  • ¼ tsp dried thyme or Italian seasoning
  • Optional: 1 cup carrots or celery chopped

Method
 

  1. Heat a large pot over medium heat. Add ground beef and cook until browned, breaking it apart.
  2. Drain excess fat if needed.
  3. Add onion and garlic; sauté until fragrant and softened.
  4. Stir in chopped cabbage and cook for 2–3 minutes.
  5. Add diced tomatoes, beef broth, and seasonings.
  6. Bring to a gentle boil, then reduce heat and simmer uncovered for 25–30 minutes.
  7. Taste and adjust seasoning before serving.

Notes

  • Use lean beef for a lighter soup
  • Add potatoes or beans for extra heartiness
  • Flavors improve the next day
