Ingredients
  

  • ½ cup rolled oats
  • ½ cup milk
  • ¼ cup plain Greek yogurt

  • 1 tbsp maple syrup or honey
  • ½ tsp cinnamon
  • tsp nutmeg
  • 1 tsp vanilla extract
  • Pinch of salt

Method
 

  1. Grate carrots finely and pat dry.
  2. Mix oats, milk, yogurt, syrup, vanilla, spices, and salt.
  3. Stir in grated carrots evenly.
  4. Cover and refrigerate overnight.
