Ingredients
  

  • For the Bread
  • 1 large soft artisan loaf or round bread
  • 2 tablespoons olive oil or melted butter
  • For the Garlic Cheese Filling
  • cups mozzarella cheese freshly shredded
  • ½ cup cheddar cheese freshly shredded
  • 4 tablespoons unsalted butter melted
  • 3 –4 garlic cloves finely minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional Toppings
  • 2 tablespoons chopped fresh parsley
  • ¼ teaspoon chili flakes
  • 2 tablespoons grated parmesan cheese

Method
 

  1. Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. Using a sharp knife, cut the bread in a crosshatch pattern, slicing down but not all the way through so the loaf stays intact.
  3. In a small bowl, mix melted butter, minced garlic, salt, and black pepper.
  4. Gently pull open the cuts in the bread and stuff shredded mozzarella and cheddar deep into the gaps.
  5. Brush the garlic butter generously over the entire loaf, letting it drip into the cuts.
  6. Wrap the bread loosely in foil and bake for 15 minutes.
  7. Uncover and bake for another 8–10 minutes until the top is lightly golden and the cheese is fully melted.
  8. Sprinkle with parsley or parmesan if using. Serve warm.

Notes

  • Use freshly shredded cheese for better melting.
  • Do not cut all the way through the bread, or it will fall apart while baking.
  • Olive oil can be used instead of butter for a lighter flavor.
  • Best enjoyed immediately while the cheese is hot and stretchy.
