Ingredients
  

  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 3 cups shredded chicken
  • 1 15 oz can black beans
  • 1 15 oz can corn
  • 1 10 oz can red enchilada sauce
  • 1 14.5 oz can diced tomatoes
  • 3 cups chicken broth
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup heavy cream optional
  • 1/2 cup shredded cheddar cheese

Method
 

  1. Heat oil and sauté onion until soft.
  2. Add garlic and spices; cook briefly.
  3. Stir in chicken, beans, corn, sauce, tomatoes, and broth.
  4. Simmer 15–20 minutes.
  5. Stir in cream and cheese. Serve warm.
