Ingredients
  

  • lb chicken pieces
  • 12 oz andouille sausage
  • ½ cup oil
  • ½ cup flour
  • 1 onion
  • 1 bell pepper
  • 2 celery stalks
  • 3 garlic cloves
  • 6 cups chicken broth
  • Cajun seasoning bay leaves

Method
 

  1. Cook oil and flour into a dark roux, stirring constantly.
  2. Add vegetables and cook until softened.
  3. Stir in garlic, broth, and seasonings.
  4. Add chicken and sausage.
  5. Simmer slowly until chicken is tender.
  6. Adjust seasoning and rest before serving.
