Ingredients
  

  • 2 lbs beef chuck or stew meat cut into chunks
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 small onion chopped
  • 3 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 cups beef broth
  • Salt and black pepper to taste
  • 2 tablespoons oil
  • For Sauteed Rice
  • 2 cups long-grain white rice
  • 2 tablespoons oil
  • 3 cups water or broth
  • Salt to taste
  • For Black Beans
  • 2 cups cooked black beans
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt to taste
  • Optional Sides
  • Warm tortillas
  • Fresh cilantro
  • Lime wedges
  • Simple peppers and rice recipes on the side

Method
 

  1. Soak and blend chiles into smooth sauce.
  2. Brown beef and simmer in chile sauce.
  3. Prepare sautéed rice until fluffy.
  4. Season and heat black beans.
  5. Serve chile colorado with rice and beans.
