Ingredients
  

  • 1 lb Chinese eggplant sliced
  • 8 oz ground pork
  • 3 tablespoons oil
  • Garlic Sauce
  • 5 cloves garlic minced
  • 1 tablespoon ginger minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • ½ cup chicken stock or water
  • 1 teaspoon cornstarch

Method
 

  1. Brown pork in hot oil; remove and set aside.
  2. Stir-fry eggplant until soft and golden.
  3. Add garlic and ginger; cook until fragrant.
  4. Stir in sauce ingredients and simmer.
  5. Return pork, toss well, and cook until glossy.
  6. Serve hot.

Notes

  • Asian eggplant gives best texture.
  • Adjust sauce thickness with water if needed.
  • Add chili paste for heat if desired
