Ingredients
  

  • cups flour
  • ½ cup protein powder
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 eggs
  • ¾ cup milk
  • cup maple syrup
  • ¼ cup melted butter or oil
  • 1 teaspoon vanilla extract
  • Cinnamon Swirl
  • 2 tablespoons brown sugar
  • 1 tablespoon cinnamon
  • 1 tablespoon melted butter

Method
 

  1. Preheat oven and line muffin pan.
  2. Mix dry ingredients in one bowl.
  3. Mix wet ingredients in another bowl.
  4. Combine gently to form batter.
  5. Layer batter and cinnamon swirl in cups.
  6. Bake until set and golden.

Notes

  • Use vanilla protein powder
  • Do not overmix batter
  • Add glaze if desired
