Ingredients
  

  • 2 cups flour
  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2 cups grated carrots
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • 1 tsp vanilla extract
  • ½ cup walnuts optional
  • Frosting
  • 8 oz cream cheese
  • ½ cup butter
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch salt

Method
 

  1. Preheat oven to 350°F (175°C) and prepare cake pans.
  2. Mix flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl whisk sugar, oil, eggs, and vanilla.
  4. Stir in grated carrots and combine with dry ingredients.
  5. Pour batter into pans and bake 30–35 minutes.
  6. Let cakes cool completely.
  7. Beat frosting ingredients until creamy.
  8. Assemble cake and frost evenly.

  • Use freshly grated carrots for better moisture.
  • Chill the cake slightly before slicing for cleaner pieces.
  • Add nuts or coconut for extra texture.
