Ingredients
  

  • 1 lb chicken breast or thighs cubed
  • cups cooked rice
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 can coconut milk
  • ½ cup chicken broth
  • 1 tablespoon soy sauce or coconut aminos
  • 1 tablespoon olive oil
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • Lime juice optional

Method
 

  1. Cook rice until fluffy and set aside.
  2. Sauté chicken in oil until lightly golden; remove from pan.
  3. Cook onion, garlic, and ginger until soft.
  4. Add coconut milk, broth, seasoning, and simmer gently.
  5. Return chicken to sauce and cook until coated.
  6. Serve over rice and finish with lime juice if desired.

Notes

  • Keep heat low to avoid coconut milk separating.
  • Add vegetables for extra nutrition.
  • Store rice and sauce separately for meal prep.180
