  • 2 cups coconut milk
  • ¼ cup sugar
  • tsp vanilla
  • 2 tsp gelatin
  • 3 tbsp cold water
  • Pinch of salt

Method
 

  1. Bloom gelatin
  2. Warm coconut milk with sugar
  3. Stir in gelatin
  4. Add vanilla
  5. Chill until set

Notes

Use full-fat coconut milk for best results.
