Method
- Cream butter and sugar until smooth.
- Mix in cocoa powder, flour, salt, and peppermint extract.
- Chill dough 30 minutes.
- Roll dough thin and cut rounds.
- Bake at 350°F (175°C) for 8–10 minutes.
- Cool completely.
- Melt chocolate with peppermint extract.
- Dip cookies and let set.
