Ingredients
  

  • Cookies
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • cups all-purpose flour
  • ¼ tsp salt
  • ½ tsp peppermint extract
  • Chocolate Coating
  • cups semi-sweet chocolate chips
  • ½ tsp peppermint extract

Method
 

  1. Cream butter and sugar until smooth.
  2. Mix in cocoa powder, flour, salt, and peppermint extract.
  3. Chill dough 30 minutes.
  4. Roll dough thin and cut rounds.
  5. Bake at 350°F (175°C) for 8–10 minutes.
  6. Cool completely.
  7. Melt chocolate with peppermint extract.
  8. Dip cookies and let set.

  • Roll dough thin for crisp cookies
  • Chill after dipping for clean set
