Ingredients
  

  • 2 cups cottage cheese
  • 2 eggs
  • 1 cup zucchini diced
  • 1 cup bell peppers diced
  • 1 cup spinach chopped
  • ½ cup onion chopped
  • 2 cloves garlic minced
  • 1 cup shredded mozzarella or cheddar
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Sauté onion, garlic, and vegetables lightly in olive oil.
  3. Mix cottage cheese, eggs, cheese, and seasoning in a bowl.
  4. Fold in vegetables and spread mixture into baking dish.
  5. Bake for 30–35 minutes until set and lightly golden.
  6. Rest for 5 minutes before slicing and serving.

Notes

  • Do not overbake to keep texture creamy.
  • Use well-drained vegetables to avoid excess moisture.
  • Add herbs or extra cheese to taste.
