Ingredients
  

  • 1 cup jasmine rice
  • 1 cup full-fat coconut milk
  • 1 cup water
  • 1 tbsp fresh lime juice
  • 1 tsp lime zest
  • ½ tsp salt
  • 2 tbsp roasted peanuts
  • 1 tbsp chopped cilantro

Method
 

  1. Rinse rice until water runs clear.
  2. Bring coconut milk, water, and salt to a boil.
  3. Add rice, cover, and simmer 15 minutes.
  4. Rest covered 5 minutes, then fluff.
  5. Stir in lime juice and zest; top with peanuts and cilantro.

Notes

  • Add lime after cooking for brighter flavor.
  • Toast peanuts for enhanced crunch.
  • Store leftovers up to four days.
