Ingredients
  

  • 2 lbs chicken breasts or thighs
  • 1/3 cup honey
  • 1/4 cup lemon juice
  • 1 cup chicken broth
  • 4 garlic cloves minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tbsp lemon zest
  • 1 tbsp cornstarch + 2 tbsp water

Method
 

  1. Place chicken in the crockpot and drizzle with olive oil.
  2. Whisk honey, lemon juice, broth, garlic, salt, pepper, and herbs.
  3. Pour over chicken and cook on LOW 4–5 hours or HIGH 2–3 hours.
  4. Shred chicken and set aside.
  5. Stir in cornstarch slurry to thicken sauce.
  6. Return chicken to the sauce and mix well.
  7. Serve warm with rice, veggies, or tortillas.

Notes

  • Add chili flakes for heat.
  • Use thighs for juicier texture.
  • Adjust sweetness or tanginess before serving.
