Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1/2 cup diced celery
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup milk
  • 2 tbsp cornstarch + 2 tbsp water

Method
 

  1. Add chicken and vegetables to crockpot.
  2. Season and pour broth over ingredients.
  3. Cook on low 6–7 hours or high 3–4 hours.
  4. Shred chicken and return to pot.
  5. Stir in milk and cornstarch slurry; cook until thickened.
  6. Serve warm with toppings.

Notes

  • Add dairy at the end for best texture.
  • Freeze leftovers in airtight containers.
  • Adjust thickness with broth or slurry.
