Ingredients
  

  • 1 lb cooked shrimp
  • 2 large cucumbers thinly sliced
  • ¼ red onion thinly sliced
  • 2 tbsp chopped dill
  • 1 tbsp parsley chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp mayonnaise or Greek yogurt
  • Salt and pepper to taste

Method
 

  1. Slice cucumbers and onions.
  2. Whisk lemon juice, olive oil, and mayo/yogurt.
  3. Add shrimp, cucumbers, onion, and herbs.
  4. Toss gently to coat.
  5. Chill 10–15 minutes before serving.

Notes

  • Add avocado for creaminess.
  • Use grilled shrimp for smoky flavor.
  • Add chili flakes for heat.
