Method
- Mix dry ingredients in one bowl and wet ingredients in another.
- Combine both mixtures and fold in carrots.
- Bake until set and cool completely.
- Prepare cream cheese frosting until smooth.
- Spread frosting over cooled cake.
- Chill briefly and slice into bars.
