Ingredients
  

  • 12 oz semi-hard cheese mozzarella, provolone, or cheddar, cubed
  • 4 oz salami sliced or torn
  • 1 cup green olives pitted
  • ½ cup extra virgin olive oil
  • 2 garlic cloves lightly crushed
  • 1 teaspoon dried Italian seasoning or oregano
  • ¼ teaspoon black pepper
  • ¼ teaspoon red chili flakes optional
  • 2 tablespoons fresh parsley or basil chopped (optional)

Method
 

  1. Cut cheese into bite-sized cubes and place in a large bowl.
  2. Add salami and green olives to the bowl.
  3. In a small bowl, mix olive oil, garlic, herbs, pepper, and chili flakes.
  4. Pour marinade over cheese mixture and toss gently to coat.
  5. Cover and refrigerate for at least 1–2 hours.
  6. Stir once before serving and serve chilled or at room temperature.

Notes

  • Use firm cheese so it holds shape while marinating
  • Best flavor develops after overnight marination
  • Adjust salt carefully olives and salami are salty
  • Add roasted peppers or artichokes for variation
