Method
- Preheat oven to 200°C (400°F).
- Place tomatoes and garlic in baking dish, season and drizzle with olive oil.
- Add feta block to center and bake until soft.
- Cook pasta until al dente and reserve some pasta water.
- Mash feta and tomatoes into sauce.
- Add pasta and toss, loosening with pasta water as needed.
- Serve warm.
Notes
- Use block feta, not crumbles.
- Add bacon or vegetables for variation.
- Best served fresh.
