Ingredients
  

  • 4 large yellow onions sliced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic
  • 1/2 cup dry white wine
  • 6 cups beef broth
  • 1 tsp fresh thyme
  • 1 bay leaf
  • 1 baguette
  • 1 1/2 cups shredded Gruyère cheese

Method
 

  1. Cook onions with butter and oil until deeply caramelized.
  2. Add garlic and deglaze with wine.
  3. Stir in broth, thyme, and bay leaf; simmer 20–25 minutes.
  4. Toast baguette slices.
  5. Ladle soup into bowls, top with bread and cheese.
  6. Broil until cheese bubbles and turns golden.
