Grapefruit Poppy Seed Cake Recipe

A tender citrus loaf infused with fresh grapefruit zest and poppy seeds, finished with a bright glaze.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tbsp poppy seeds
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¾ cup butter
  • 1 cup sugar
  • 2 eggs
  • 2 tbsp grapefruit zest
  • ½ cup grapefruit juice
  • ½ cup milk
  • 1 tsp vanilla
  • 1 cup powdered sugar
  • 2 –3 tbsp grapefruit juice

Method
 

  1. Preheat oven and prepare loaf pan.
  2. Whisk dry ingredients together.
  3. Cream butter and sugar; add eggs.
  4. Mix in zest, juice, milk, and vanilla.
  5. Combine dry ingredients and bake 45–50 minutes.
  6. Cool and drizzle glaze.

Notes

  • Use fresh grapefruit for best results.
  • Do not overmix batter.
  • Allow cake to cool fully before glazing.
