Ingredients
  

  • 1 lb ground chicken or beef
  • ¼ cup breadcrumbs
  • 1 egg
  • 3 tbsp parsley
  • 2 tbsp dill
  • 2 cloves garlic
  • 1 tsp oregano
  • ¾ tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • cups chicken broth
  • 2 eggs
  • 3 tbsp lemon juice

Method
 

  1. Mix meatball ingredients gently
  2. Shape into meatballs
  3. Brown in olive oil and set aside
  4. Temper eggs with warm broth and lemon
  5. Simmer meatballs in sauce until thickened
