Ingredients
  

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • ½ tsp salt

Method
 

  1. Marinate salmon with lime, garlic, and oil.
  2. Cook coconut rice until tender.
  3. Prepare mango avocado salsa.
  4. Grill salmon 4–5 minutes per side.
  5. Assemble plates and serve warm.
