Ingredients
  

  • 2 lbs tomatoes
  • 1 small onion
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 2 cups vegetable broth
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp oregano
  • ¼ cup fresh basil
  • ¼ cup heavy cream optional

Method
 

  1. Roast tomatoes, onion, and garlic at 400°F for 25–30 minutes.
  2. Blend roasted vegetables with broth.
  3. Simmer with oregano and basil for 10 minutes.
  4. Stir in cream if desired.
  5. Adjust seasoning and serve hot.

Notes

  • Store up to 5 days refrigerated.
  • Freeze up to 3 months.
