Ingredients
  

  • 3 cups corn kernels
  • 2 medium potatoes diced
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons olive oil or butter
  • 3 cups vegetable or chicken broth
  • 1 cup milk or cream
  • Salt and black pepper to taste
  • Optional cooked bacon or spices

Method
 

  1. Set Instant Pot to sauté and cook onion in oil until soft.
  2. Add garlic and stir briefly.
  3. Add corn, potatoes, broth, and seasoning.
  4. Seal and pressure cook on high.
  5. Release pressure, stir in milk or cream.
  6. Mash slightly for thicker texture and serve.

Notes

  • Mash potatoes for natural thickness
  • Add bacon for extra richness
  • Adjust cream to taste
