Ingredients
  

  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic
  • 2 carrots sliced
  • 2 celery stalks
  • 6 cups broth
  • 1 tsp oregano
  • ½ tsp thyme
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 cup pasta or chicken
  • 1 tbsp parsley
  • Juice ½ lemon

Method
 

  1. Heat oil and sauté onion and garlic.
  2. Add carrots and celery; cook 5 minutes.
  3. Pour in broth and seasonings; simmer 10–12 minutes.
  4. Add pasta or chicken and cook until tender.
  5. Stir in parsley and lemon before serving.

Notes

  • Store up to 4 days.
  • Add broth when reheating if needed.
  • Skip pasta if freezing.
