Ingredients
  

  • Soup Ingredients:
  • 1 lb Italian sausage
  • 1 large butternut squash
  • 1 onion
  • 3 garlic cloves
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp rosemary
  • 1 tsp thyme
  • ½ tsp paprika
  • Salt pepper
  • Optional Toppings:
  • Spinach
  • Parmesan
  • Chili flakes
  • Fresh herbs

Method
 

  1. Brown Italian sausage in a pot and set aside.
  2. Sauté onion and garlic in the same pot.
  3. Add squash, herbs, and spices.
  4. Pour chicken broth and simmer until squash is soft.
  5. Blend until creamy, add sausage back, and stir in cream.
  6. Adjust seasoning and serve warm.

Notes

  • Coconut milk can replace cream.
  • Roast squash for richer flavor.
  • Add spinach or kale at the end for freshness.
