Ingredients
  

  • Salad Ingredients:
  • 3 cups cooked rotini or penne pasta
  • 1 cup cherry tomatoes halved
  • 1 cup diced bell peppers
  • 1 cup cubed pineapple or mango
  • ½ cup sliced black olives
  • ½ cup crumbled feta or shredded cheddar cheese
  • ¼ cup chopped fresh parsley or cilantro
  • 1 cup cooked shrimp chicken, or tofu (optional)
  • Dressing Ingredients:
  • ¼ cup olive oil
  • 2 tbsp lime or lemon juice
  • 1 tbsp honey or agave syrup
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 clove garlic minced
  • 1 tsp finely chopped fresh basil or mint

Method
 

  1. Cook pasta until al dente, drain, and cool.
  2. Chop vegetables and fruit; slice olives and herbs.
  3. Whisk together dressing ingredients until smooth.
  4. Combine pasta, vegetables, fruit, olives, and protein in a bowl.
  5. Pour dressing over salad, toss gently, and refrigerate for 30 minutes.
  6. Serve chilled, garnish with herbs or cheese.

Notes

  • Customize with tropical fruits or protein.
  • Toasted coconut or chili powder adds a fun twist.
  • Store dressing separately for longer freshness.
