Ingredients
  

  • 1 cup brown lentils
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic
  • 1 cup carrots
  • 1 cup celery
  • 1 tbsp tomato paste
  • 4 cups vegetable broth
  • 1 tsp thyme
  • 1 tsp paprika
  • 2 lbs Yukon Gold potatoes
  • 4 tbsp butter
  • ½ cup milk
  • Salt and pepper to taste

Method
 

  1. Sauté onion, carrots, celery, and garlic.
  2. Add lentils, broth, and seasonings. Simmer 25–30 minutes.
  3. Boil potatoes until tender.
  4. Mash with butter and milk.
  5. Serve stew topped with mashed potatoes.
