Ingredients
  

  • 2 lbs cooked lobster meat
  • 4 tbsp unsalted butter
  • 1 small onion diced
  • 1 celery stalk chopped
  • 2 cups seafood stock
  • cups heavy cream
  • 1 cup whole milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika
  • 1 bay leaf

Method
 

  1. Melt butter and sauté onion and celery until soft.
  2. Add seafood stock and bay leaf; simmer gently.
  3. Stir in cream and milk over low heat.
  4. Add lobster and seasonings.
  5. Warm gently without boiling.
  6. Remove bay leaf and serve hot.

Notes

  • Keep heat low once cream is added
  • Add lobster at the end for tenderness
