Ingredients
  

  • 1 lb dried red kidney beans
  • 1 tbsp olive oil
  • 12 oz smoked sausage sliced
  • 1 onion diced
  • 1 green bell pepper diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • ¼ tsp cayenne pepper
  • 1 bay leaf
  • 6 cups broth
  • Salt and pepper to taste

Method
 

  1. Soak beans overnight; drain.
  2. Brown sausage and set aside.
  3. Sauté vegetables and garlic.
  4. Add beans, spices, broth, and bay leaf.
  5. Simmer until beans are tender and creamy.
  6. Return sausage to pot and adjust seasoning.
  7. Serve over cooked rice.

Notes

  • Stir occasionally during simmering
  • Mash some beans for thicker texture
