Ingredients
  

  • 1 cup unsalted butter
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2 tbsp mandarin orange zest
  • 1/2 cup mandarin orange juice
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sour cream
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven and prepare pan.
  2. Cream butter and sugar until fluffy.
  3. Add eggs, zest, juice, and vanilla.
  4. Mix dry ingredients separately.
  5. Combine dry mixture alternately with sour cream.
  6. Pour into pan and bake 50–60 minutes.
  7. Cool completely before slicing.

Notes

  • Use fresh citrus for best flavor
  • Do not overmix batter
  • Cool fully before glazing
