Ingredients
  

  • 2 acorn squash
  • 3 tbsp olive oil
  • ¼ cup maple syrup
  • 1 tsp rosemary
  • ¾ tsp salt
  • ½ tsp black pepper
  • ½ cup pecans

Method
 

  1. Halve and season squash
  2. Roast cut-side down
  3. Flip, add maple and pecans
  4. Roast until caramelized
  5. Serve warm

Notes

Add maple syrup in the second roast to avoid burning.
