Ingredients
  

  • 2 cups elbow macaroni uncooked
  • 1 cup sweet corn
  • 1 cup black beans drained and rinsed
  • 1 red bell pepper diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • Dressing
  • ¾ cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper to taste

Method
 

  1. Cook macaroni according to package instructions; drain and rinse with cold water.
  2. In a bowl, whisk together all dressing ingredients until smooth.
  3. Add cooled pasta, corn, beans, bell pepper, onion, and cilantro to a large bowl.
  4. Pour dressing over the salad and mix gently until fully coated.
  5. Cover and refrigerate for at least 30 minutes before serving.

Notes

  • Chill before serving for best flavor.
  • Adjust lime juice and salt after chilling.
  • Add jalapeños or hot sauce for heat.
  • Greek yogurt can replace sour cream for a lighter version.
  • Stir before serving if dressing settles.
