Ingredients
  

  • 2 cups cooked white or brown rice
  • 1 lb 450g ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 fresh avocado sliced
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion thinly sliced
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Fresh cilantro chopped

Method
 

  1. Cook rice according to package instructions. Season lightly with salt and lime juice once cooked.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add ground beef and cook until browned. Stir in chili powder, cumin, paprika, salt, and pepper. Cook until fully done.
  3. Warm black beans in a small saucepan with remaining olive oil and a pinch of salt.
  4. Slice avocado, halve cherry tomatoes, and toss red onion with lime juice to create a quick salad.
  5. Divide rice into bowls. Top with seasoned beef, black beans, corn, tomatoes, red onion salad, and avocado. Garnish with cilantro and serve.

Notes

  • Store rice, beef, and beans separately for up to 4 days.
  • Add fresh avocado just before serving to prevent browning.
  • For a vegetarian version, substitute beef with extra beans or grilled vegetables.
  • Adjust spices based on your heat preference.
