Ingredients
  

  • 2 lb boneless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 garlic cloves minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp oregano
  • 1 cup tomato sauce
  • ½ cup chicken broth
  • Salt & pepper

Method
 

  1. Season chicken and sear lightly in olive oil.
  2. Cook onion and garlic until soft, then add spices.
  3. Stir in tomato sauce and broth; simmer gently.
  4. Add chicken back and cook until tender.
  5. Shred chicken and return to sauce.
  6. Simmer until thick and well-coated.

  • Use rotisserie chicken for faster prep
  • Broil shredded chicken for crispy edges
