Mouthwatering Apple Fritter Cake Recipe Card

Ingredients
  

  • For the Cake
  • 2 cups all-purpose flour
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • teaspoons vanilla extract
  • ¾ cup milk or buttermilk
  • 2 cups apples peeled and diced
  • For the Cinnamon Apple Swirl
  • ½ cup brown sugar
  • teaspoons ground cinnamon
  • ½ cup extra diced apples
  • Optional Glaze
  • ¾ cup powdered sugar
  • 2 –3 tablespoons milk
  • ½ teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, cream butter and sugars until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla.
  5. Add dry ingredients alternately with milk, mixing gently until just combined.
  6. Pour half the batter into the pan.
  7. Sprinkle half the cinnamon sugar and apples over the batter.
  8. Add remaining batter, then top with remaining apples and cinnamon sugar.
  9. Swirl lightly with a knife for a layered look.
  10. Bake until golden and a toothpick comes out with a few moist crumbs.
  11. Cool slightly, then drizzle with glaze if using.

Notes

  • Use firm apples like Granny Smith or Honeycrisp for best texture.
  • Do not overmix the batter to keep the cake soft.
  • This recipe also works well as an apple cinnamon bread loaf with longer bake time.
