Ingredients
  

  • 4 tbsp butter
  • 1 onion chopped
  • 2 celery stalks chopped
  • 2 cloves garlic minced
  • 3 tbsp flour
  • 2 cups diced potatoes
  • 2 cups clam juice
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups chopped clams
  • Salt & pepper

Method
 

  1. Sauté onion and celery in butter until soft.
  2. Add garlic and flour, stirring constantly.
  3. Pour in clam juice and add potatoes; simmer until tender.
  4. Stir in milk and cream, keeping heat low.
  5. Add clams and season gently.
  6. Rest briefly before serving.

Notes

  • Do not boil after adding cream
  • Mash potatoes to thicken naturally
  • Best served fresh
  • Adjust consistency with milk or stock
