Ingredients
  

  • 2 cups digestive biscuit crumbs
  • 1/2 cup unsalted butter melted
  • 8 oz white chocolate
  • 16 oz cream cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

Method
 

  1. Mix crumbs with melted butter and press into pan. Chill 20 minutes.
  2. Melt white chocolate and cool slightly.
  3. Beat cream cheese and sugar until smooth.
  4. Mix in vanilla and white chocolate.
  5. Whip cream to soft peaks and fold in gently.
  6. Spread filling over crust and chill 6 hours or overnight.
