Ingredients
  

For the Dish
  • 1 cup long-grain white rice rinsed
  • 2 cups chicken broth or vegetable broth
  • 1 tbsp olive oil
  • 1 ½ cups corn kernels fresh, canned, or frozen
  • 2 cloves garlic minced
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup mayonnaise
  • ½ cup crumbled cotija cheese or feta
  • ½ cup shredded mozzarella cheese
  • 2 tbsp fresh lime juice
  • 2 tbsp chopped cilantro
Optional Add-Ins / Toppings
  • Diced jalapeños
  • Sliced green onions
  • Extra chili powder
  • Avocado cubes
  • Sour cream drizzle

Method
 

  1. Toast rice in olive oil.
  2. Add corn and garlic; cook briefly.
  3. Add broth and seasoning; simmer covered.
  4. Stir in mayonnaise, cheeses, lime, and cilantro.
  5. Garnish and serve warm.

Notes

  • Rinse rice before cooking.
  • Add cheese after removing from heat.
  • Adjust spice to preference.
