Ingredients
  

  • 1 3 oz box orange-flavored gelatin (Jell-O style)
  • 1 cup boiling water
  • ½ cup cold water
  • 1 3.4 oz box instant vanilla pudding mix
  • 1 8 oz container whipped topping, thawed
  • 1 11 oz can mandarin oranges, well drained

Method
 

  1. In a large bowl, dissolve the orange gelatin in boiling water, stirring until fully dissolved.
  2. Stir in cold water and allow the mixture to cool slightly (do not let it set).
  3. Whisk in the instant vanilla pudding mix until smooth and lightly thickened.
  4. Gently fold in the whipped topping until fully combined and creamy.
  5. Fold in the drained mandarin oranges.
  6. Refrigerate for at least 2 hours, or until chilled and set, before serving.

Notes

  • Drain mandarin oranges very well to avoid excess liquid
  • Use instant pudding only (not cook-and-serve)
  • Fold gently to keep the texture light and fluffy
  • Can be made several hours ahead for best consistency
