Method
- In a large bowl, dissolve the orange gelatin in boiling water, stirring until fully dissolved.
- Stir in cold water and allow the mixture to cool slightly (do not let it set).
- Whisk in the instant vanilla pudding mix until smooth and lightly thickened.
- Gently fold in the whipped topping until fully combined and creamy.
- Fold in the drained mandarin oranges.
- Refrigerate for at least 2 hours, or until chilled and set, before serving.
Notes
- Drain mandarin oranges very well to avoid excess liquid
- Use instant pudding only (not cook-and-serve)
- Fold gently to keep the texture light and fluffy
- Can be made several hours ahead for best consistency
