Ingredients
  

  • 2 cups sliced peaches fresh, frozen, or canned
  • 2 tbsp butter
  • ¼ cup sugar
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch + 1 tbsp water
  • 8 –10 egg roll wrappers
  • Oil for frying
  • Powdered sugar or caramel optional

Method
 

  1. In a pan, cook peaches, butter, sugars, cinnamon, nutmeg, and vanilla.
  2. Stir in cornstarch slurry to thicken. Let cool.
  3. Place filling in wrappers and roll tightly.
  4. Seal edges with water.
  5. Fry until golden or air fry until crisp.
  6. Serve warm with powdered sugar or caramel.

Notes

  • Add pecans or cream cheese for variations.
  • Thick filling prevents leakage.
