Ingredients
  

For the Dish
  • 1 cup ripe persimmon pulp
  • cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup butter softened
  • 1 egg
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
Optional Add-Ins / Toppings
  • Chopped walnuts
  • Raisins
  • Powdered sugar

Method
 

  1. Preheat oven to 350°F.
  2. Mix dry ingredients in a bowl.
  3. Cream butter and sugars together.
  4. Add persimmon pulp, egg, and vanilla.
  5. Combine wet and dry ingredients.
  6. Scoop dough onto baking sheet.
  7. Bake for 12–15 minutes.

Notes

  • Use ripe persimmons for best flavor.
  • Do not overmix dough.
  • Cool cookies slightly before serving.
