Ingredients
  

  • 8 oz cream cheese softened
  • ½ cup crushed pineapple well drained
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ¾ cup chopped pecans

Method
 

  1. Drain crushed pineapple thoroughly.
  2. Mix cream cheese, powdered sugar, and vanilla until smooth.
  3. Fold in pineapple gently.
  4. Shape into a ball and chill until firm.
  5. Roll in chopped pecans and serve.

Notes

  • Drain pineapple very well
  • Chill before rolling in pecans
  • Serve slightly softened
