Ingredients
  

  • 1 lb chicken thighs or breasts
  • Salt and black pepper
  • Garlic powder
  • Paprika
  • 1 tablespoon cornstarch
  • 2 tablespoons oil
  • 1 cup pineapple fresh or canned
  • 1 cup mango pureed or chopped
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger
  • 2 tablespoons soy sauce
  • tablespoons honey or brown sugar
  • 1 tablespoon apple cider vinegar or lime juice

Method
 

  1. Season chicken and lightly coat with cornstarch.
  2. Cook chicken until golden and set aside.
  3. Simmer pineapple, mango, garlic, and ginger.
  4. Add soy sauce, sweetener, and vinegar; thicken gently.
  5. Return chicken, toss to coat, and caramelize lightly.
