Ingredients
  

  • 2 lb beef stew meat
  • 2 tbsp olive oil
  • 1 onion chopped
  • 4 garlic cloves minced
  • 1 green bell pepper chopped
  • 1 tbsp sofrito
  • 1 tsp oregano
  • 1 tsp cumin
  • 2 bay leaves
  • 8 cups water or beef broth
  • 2 yuca peeled and chopped
  • 2 green plantains sliced
  • 2 potatoes cubed
  • 2 corn ears cut
  • Salt and pepper

Method
 

  1. Season beef well and brown in olive oil until deeply golden on all sides.
  2. Add onion, garlic, and bell pepper; cook until softened and aromatic.
  3. Stir in sofrito, spices, and bay leaves, letting flavors bloom.
  4. Pour in broth, bring to a boil, then simmer until beef is tender.
  5. Add all vegetables and continue simmering until thick and hearty.
  6. Adjust seasoning, stir in fresh herbs, and rest before serving.

Notes

  • Let simmer longer for deeper flavor
  • Mash vegetables slightly to thicken naturally
  • Stores well and tastes better the next day
